Prep. Prep. Prep.

Meal prepping has always been a struggle for me. Why? Because eating the same thing can be very exhausting an unexciting to me. Like where is the fun in that?! But I guess that's my problem. I need to focus on "eating to live and not living to eat" clearly. Well, this past Sunday I finally decided to do just do that. I also decided that it was time to meal prep because I noticed cooking in the evening took up so much of my time. Time I could be spending with Nova. I mean that time passes by so quickly when your slaving in the kitchen trying to feed your family! You look up and it's literally almost 10 o'clock and I'm just over it at that point. Unfortunately, I'm not a stay at home mom, so I'm not able to spend long hours with Nova throughout the day. I leave the office, head to the gym, and then I pick Nova up. I'm getting home fairly late which is why I'm trying to make sure my time is well spent with my daughter. So yea..I decided that cooking on the weekdays is out for me right now. I'm just not trying to feel it, so meal prepping it is!

 

It took me a total of two and a half hours to prep, but I'm sure the process will be much quicker once I continue to do it. Right now, I'm trying to find the quickest and tastiest meals to make, preferably oven meals so I won't have to be up on my feet in the kitchen on a Sunday (millennial smh). I rebuke all of that right now. Anyways, the first week went well. I didn't get tired of any meals so that was real good. Nijyl says that it's working out for him also. So no complaints there! I'm definitely going to continue to keep this up because it does save you money, forces you to eat right, and cuts out weekday cooking. Who wouldn't love that? Below are the meals and snacks that I tried and some more benefits of meal prepping.

 

Breakfast

2 boiled eggs 

Green Smoothie

 

Snack 

Strawberries and Grapes

 

Lunch

Turkey Sausage with sautéed onions and peppers over whole grain rice

Cup of Carrots

Cup of Grapes

 

Snack 

Greek Yogurt

 

Dinner 

Baked Chicken and cooked spinach
